Ultrasonic Cake Cutting: A Sample Evaluation Checklist
Start with the actual food product rather than a machine speed claim. MCSONIC lists ultrasonic portioning equipment for round and square cakes, mousse and pastries, alongside conveyor and handheld formats. A sample evaluation should connect the required cut quality with handling and output expectations.

Information to prepare
| Product condition | Document dimensions, layers, fillings and the temperature range at the point of cutting. |
|---|---|
| Portion pattern | Provide the required shapes, dimensions and permissible variation, including edge portions. |
| Line handling | Show the tray or conveyor arrangement, loading method and upstream and downstream timing. |
| Evaluation records | Use representative samples and record cutting conditions, visible defects, sticking and the agreed inspection results. |
Compare whole-process output
Requested output should account for loading, cutting, unloading and cleaning, not only a blade movement. Identify the operator tasks or line interfaces needed for each equipment format. Describe recipe changes and different product sizes so their effect on handling can be reviewed rather than assuming one setup fits every product.
Confirm sanitation and acceptance requirements
State your food-contact, cleaning and documentation requirements in the inquiry. Confirm the selected configuration against those requirements; an application illustration is not proof of food-contact certification. Use the agreed sample criteria in the quotation and acceptance process. No universal cut-quality or throughput guarantee can be inferred from the product category.
Should I choose a handheld cutter or an automatic machine?
Compare the required portion pattern, handling consistency, production volume and operator tasks. Send those requirements with representative product details to discuss the most suitable format.
